Minding Our Business Libby's Aunt T's Coffee Corner has new owners

Mati Bishop and Randa Holm have assumed ownership of Aunt T’s Coffee Corner, which has been open for business at 417 Mineral Ave. in Libby for almost two years.

Bishop, of Everett, Washington, is the son of the shop’s founders, Tracy and Martin Vincent, and has been visiting the Libby area since the early 1990s. Holm has been general manager for six months and has lived in the area for a number of years.

Bishop brings to the business marketing, business development and food service knowhow, he told The Western News, while Holm contributes knowledge of day-to-day operations.

In addition to espresso and coffee drinks, Aunt T’s Coffee Corner offers breakfast and lunch items including sandwiches, yogurt parfaits and baked goods, as well as energy drinks, assorted snacks and locally crafted souvenirs.

The shop also sells whole-bean, small-batch coffee from Libby-based Camp Creek Coffee Roasters — including a limited run of a dark Columbian roast packaged in bags depicting local landmarks such as the Swinging Bridge, Libby Creek Falls and Pipe Creek.

Aunt T’s Coffee Corner is open 7 a.m. to 2:30 p.m., Monday through Friday.
